Start with Merrill in the north, they have a new paved parking lot, and have the stand in a bay of the barn on the connected farmhouse. It is white, clean and full of produce from the nearby fields. If your recipe calls for eggs this is the place to pick them up! They are laid fresh every day, and supplied to the other farmstands in town.

Next head down High Range Road, you can cut over through Hall Road for your own mini foliage tour this time of year. The Cohas is blazing with color right now! Sunnycrest will have many of the items in this recipe. Pick up some cider doughnuts, they are hard to make. Looking for smiles from the kids on a rainy day? Slice them in two so they fit in a toaster. Toast them up and while they are warm spread butter or margarine on them.

Back on the road for your recipe ingredients… Turn right out of Sunnycrest and your next right onto Elwood Road. The farmstand is right on the corner of the barn, this is the best place for cabbage in Londonderry.

Of to Mack’s Apples, they have more than just apples and pumpkins! It is on the way to Shaw’s, Market Basket or Hannaford at those supermarkets you can pick up what you missed on the farm stand tour.

Londonderry Four Farm Coleslaw

All the fresh flavors of Gazpacho soup but served as a slaw. Serve over a bed of young greens, but you can also serve it as a side salad. (keep the cold soup taste a secret if you have children)

  • 5 cups shredded green cabbage
  • ¼ cup tomato-vegetable juice cocktail (use any type, the photos show Hot and Spicy V-8)
  • ½ cup chopped cucumber
  • ½ cup sliced green onion
  • ¼ cup red wine vinegar
  • 1 teaspoon white sugar (You can use Hank’s Maple Syrup, just 25% less)
  • 1 tablespoon olive oil
  • 1 tablespoon salsa (use homemade from Elwood Tomatoes if you can!)
  • ½ lemon, juiced

In a large salad bowl mix cabbage, cucumbers, tomato, yellow bell pepper, green onions, and celery.In a separate bowl, whisk together the tomato-vegetable juice, red wine vinegar, sugar, olive oil, salsa, and lemon juice. Season with salt and pepper.

Pour the dressing over the vegetables, and toss to coat. Cover, and refrigerate 2 hours before serving.

Radishes and black olives are optional we added those for flavor when found them on our farm stand scavenger hunt.
