A Collaborative Space for Culinary Enthusiasts and Growing Food Entrepreneurs

Derry, NH, April 15, 2013: Creative Chef Kitchens, (CCK) is a commercial rental kitchen equipped with cooking and food processing stations for bakers, caterers, cake decorators, canners, commercial (retailers and wholesalers) food processors, home chefs, restaurant startups, food photographers and videographers, cooking instructors and other New England Food Entrepreneurs. The 2481 square foot space will offer 10 stations – 6 cooking, 3 food processing and 1 conference room for classes and demos. Each cooking station has convection ovens, ranges, a tilting skillet, tilting kettles etc., will have prep tables and prep sinks assigned. Refrigerator and Freezer space as well as dry pantry storage will be available to each customer during work hours. We will also provide small wares and linens so users will only have to bring in their ingredients, disposables and containers to take out the finished products.

The 3 food processing stations will accommodate home-based food startups who need to package and label finished products, cake decorating and other non-cooking related activities and will have access to prep tables and prep sinks. A multi-purpose conference space to seat up to 30 people is also available for cooking classes, nutritional lectures and light cooking demos, photography, and video/audio taping. The CCK will be certified for small commercial food preparation and inspected regularly by the local health inspector to maintain the highest quality and efficiency standards.

Every new customer and business which signs up to rent time at CCK will have to be licensed and certified by the Derry Health Inspector and complete a Hazard Analysis and Critical Control Plan (HACCP) to comply with state regulations. They will be required to have valid ServSafe certification and a comprehensive insurance policy naming the CCK as a secondary beneficiary. The Town Health Inspector will also complete periodic checks on the Kitchen and to enable us to be compliant with state and local health codes.

Doubling as a food business incubator and accelerator, in cooperation with SCORE, the SBA, UNH and local business Chambers and private consultants we will offer food prep/safety classes, mentoring, consulting, and business courses for customers using the CCK. This value-added service is intended to assist food entrepreneurs plan, fund, grow and expand their businesses.

Everyone seems to have an original family recipe they would like to market, a new restaurant idea, or an untried food concept they would like to commercialize. The growth of local farmers markets, consumer demand for less processed foods and the local food movement has inspired small food producers and food fanatics to dust off their old recipes and food ideas and experiment. Culinary ventures seem the easiest to launch especially for those who have considered cooking a hobby and feel they are ready to place their products on a groceries shelf or open a restaurant or a catering service. But as with any business, every idea needs to be incubated from creating a product prototype, to evaluating demand, identifying marketing channels, understanding pricing, securing financing among other details before investing in a business.
